From Anticuchos to the Table A Peruvian BBQ Sauce Workshop with House of Habanero × Chef Roberto Segura. What happens when a sauce traditionally tied to one of Peru’s most iconic dishes finds a new place at the BBQ table? House of Habanero founder Faisal Al Mutairi and Peruvian chef Roberto Segura invite guests around the table to explore the story behind the classic red sauce served with anticuchos, and learn how to make it themselves. Together, Faisal and Roberto will unpack the balance of chilli, acidity, seasoning and spice that gives the sauce its distinctive character, while demonstrating how its heat can be adjusted without losing its identity. Guests will then make their own version to take home. Building on Peru Over Fire, the workshop moves the experience from tasting to making: from gathering around the fire to gathering around the table. Within the theme of Khubz wa Milh, it also explores another role of salt, not only something shared at the table, but one of humanity’s oldest tools for seasoning, preservation and extending the life of food.
