Sixty Forty x Chobap For one special evening, Sixty Forty welcomes Chef Clark Park of Chobap Sushi Bar for our first-ever collaboration dinner, bringing together Japanese culinary traditions, exceptional Vancouver Island ingredients, and two distinct culinary perspectives. Recently recognized with Restaurant of the Year and Chef of the Year honours in Victoria by YAM Magazine, Chobap is celebrated for its Japanese craftsmanship, thoughtful hospitality, and intimate omakase experiences. Fresh from an inspiring journey through Japan, Chef Paul returns to the Sixty Forty farm with new ideas, treasured ingredients and techniques gathered along the way. Together, he and Chef Clark have created an adventurous menu inspired by Japan and the bounty of Vancouver Island. Expect a progression of delicate raw preparations, expertly prepared sushi, and thoughtfully composed cooked dishes, showcasing local fish and seafood alongside seasonal vegetables, wild ingredients, and produce from the farm. An optional wine and sake pairing will be available, thoughtfully curated to complement the menu and bring another dimension to the evening. Two chefs. Two distinct perspectives. Things to know: • Dinner includes a multi-coursed experience, prepared by collaborating chefs, Paul Moran of Sixty Forty and Clark Park of Chobap. • A small selection of non-alcoholic beverages are available, and there is a $0 corkage fee should you wish to bring a bottle of wine to enjoy. We do not sell alcohol on site, however, for this evening, a wine & sake pairing is available to add on in advance. • Seating is shared along beautiful live-edge wooden tables. • Kindly note this is a scent-free dining environment. As seating is shared, this helps ensure a comfortable experience for all guests and allows the cuisine to be fully appreciated. • Most allergies can be accommodated, please let us know at minimum 3 days prior to the event.
