FIELD TO FLAME is an immersive masterclass following venison through the next stage of its journey, from whole carcass to carefully prepared cuts, and finally onto the plate. Hosted at HR4K and sponsored by Patrol Goods, FIELD TO FLAME brings together experts in butchery, cooking and knife craft for an afternoon dedicated to understanding one of Britain’s finest wild meats and the skills needed to make the most of it. THE BUTCHERY — ALI CAMPBELL Deer manager and seasoned stalker Ali Campbell will take on a whole deer, demonstrating how the carcass is broken down and explaining the different cuts as he works. You’ll learn where each cut comes from, what it’s best suited to, how to minimise waste and how proper, simple butchery can transform the way you approach venison. This is a chance to watch a highly skilled craftsman at work up close, ask questions and understand what happens between the field and the kitchen. THE COOKING — PAUL GALLAGHER Once the best cuts have been prepared RAF veteran and former senior chef to Queen Elizabeth at Buckingham Palace, Paul Gallagher takes over. Paul will demonstrate how to prepare and cook venison, sharing techniques for getting the very best from different cuts and creating incredible food without overcomplicating it. And you won't just be watching. Your ticket includes tasters of the venison prepared during Paul's demonstration. THE KNIVES — BEN & LOIS ORFORD, CRAFT LAB A job is only as good as the tools you use. Handmade woodcraft and bushcraft toolmakers Ben & Lois Orford of Craft Lab will explore the knives used throughout the process, from choosing the right blade for the job to sharpening, maintaining and caring for your knives. Expect practical knowledge from people who understand what makes a genuinely good working knife and build their tools by hand.
