Supper Club: Preserving Heritage in Times of Conflict

A dinner celebrating the diverse culinary traditions of Ukraine’s historic Black Sea city. As part of our Preservation season, the Food & Drink Studio will explore the vital role food plays in safeguarding heritage, identity and collective memory during times of upheaval and conflict. We are delighted to welcome Maria Kalenska—food writer, gastronome and author of Cuisines of Odesa—a cookbook featuring contributions from more than 100 Odesan families and celebrating the diverse culinary traditions of Ukraine’s historic Black Sea city. Joined by food journalist Felicity Spector, who wrote the book’s foreword, Maria will bring this lesser-known food culture to life. Together, they will explore how Odesa’s cuisine reflects a rich blend of Ukrainian, Jewish, Greek, Turkish and Armenian influences, shaped over centuries by migration, trade and cultural exchange. At a time when conflict threatens to overshadow the everyday lives and traditions of communities, documenting recipes has become a powerful act of remembrance, resilience and resistance. In writing Cuisines of Odesa, Maria is ensuring that culinary heritage can be preserved and protected for future generations, even in the most challenging of circumstances.
