We’ll start with the fundamentals of coffee roasting, looking at what happens to coffee during the roast and how different roasting decisions can influence flavour in the cup. You’ll then choose from a selection of specialty green coffees (single origin, cupping score 87–88) and decide how you’d like your coffee to be roasted. Whether you prefer something light and bright for filter, or a little more developed for a fuller and sweeter cup, we’ll explore how the roast can be adapted to bring out different characteristics of the coffee. With guidance from Shufan, you’ll roast your chosen coffee, learning how to observe the roast, understand its different stages, and make decisions along the way. At the end, you’ll take home around 250 g of coffee you roasted alongside Shufan, ready to brew and enjoy at home.
