Dive into the world of water chemistry with Shufan and brew the competition coffees at our hands-on coffee workshop! Coffee Workshop: Water Chemistry Advanced 💧☕ Ready to take your coffee water knowledge further? In this advanced session, we will explore how water chemistry can shape the flavour and character of some exceptional coffees, using 2–3 competition level coffees brewed with different mineral compositions. One of the coffees will be the coffee Shufan used to place 3rd in the 2026 UK Brewers Cup, served with the same water recipe used during the competition. With a background in chemistry and a PhD in Chemistry, Shufan combines their scientific background with their experience in competitive coffee to explore how water can be used to shape the final cup. This gives you the chance to taste the coffee through the same water used to brew it for the competition, and experience how carefully designed water can influence extraction, balance and flavour. We will compare different water recipes side by side, explore how changes in mineral composition interact with different coffees, and look at how water can be developed specifically for a coffee. This workshop is designed for those who have completed our Water Chemistry Fundamentals and Intermediate sessions, or already have a good understanding of coffee water chemistry.
