The Höst Table: Mysig Ember Turns Amber Some seasons ask us to gather. Others ask us to slow down. This October, Mysig Ember turns amber. As the light softens, the leaves turn golden and Swedish autumn settles in, The Höst Table brings the season indoors, asking what happens when the ingredients of a Nordic autumn find their way into a Kerala kitchen. We begin with masala chai, warm with spice and made for colder evenings. Around the grazing table, chanterelles, one of the treasures of the Swedish autumn, are prepared Kerala style with toasted coconut and tucked into little pie shells. Knäckebröd meets avial, while kozhukatta, soft steamed rice balls from Kerala, are filled with spiced koorka, or Chinese potato. Then pumpkin takes centre stage. Pumpkin erissery with cowpeas, roasted coconut and cumin is spooned over soft mini kallappam, bringing a Kerala classic into the colours of the season. For the main course, we return to something deeply familiar: puttu, steamed rice cake layered with coconut, served with a choice of kadala curry or Kerala-style chicken curry. Simple, comforting food made for lingering at the table. And to unwind, autumn becomes dessert. Apples, blackberries, jaggery and cardamom come together in a warm bake, finished with a delicate jaggery-cardamom crumble. Swedish autumn fruit, carried somewhere warmer by Kerala spice.
