Full description from organizer

Eat, appreciate, and celebrate Japanese Wagyu! Join us in The Cooking School at Jungle Jim's Fairfield on December 2 at 7 PM for Inside the Cut: A Wagyu Experience, an introductory course on one of the world’s most prized ingredients. Learn from Brian Lofink and Nicholas Hellberg of Wagyu Sommelier, the only American trade certification program for authentic Japanese Wagyu recognized and backed by Japan’s Ministry of Agriculture, Forestry and Fisheries. A5 Japanese Wagyu is the most sought-after beef in the world for its exquisite marbling and luxurious mouthfeel, but what is it that makes it so special? Are Japanese beef cattle really fed beer and given daily massages? What’s the difference between American, Australian, and Japanese Wagyu? And is your favorite restaurant’s Kobe burger real or not? We’ll break it all down, literally and figuratively, with an in-depth look at this often-mythologized meat and a live primal butchery demonstration by Certified Wagyu Sommelier and Butchery Educator Brian Lofink. Throughout the evening, you'll sample beef cuts rarely seen in the United States, including uchimomo steak and katarosu yakiniku, and explore the nuances of pairing Wagyu with delicate wines. Every attendee will leave with an introductory Wagyu Sommelier certificate, an honorary WS bull’s head pin, and an informational booklet. You'll also have the first opportunity to purchase fresh cuts from the steer before our selling event on December 4, along with the knowledge and confidence to prepare them at home! Get inside the cut in this exclusive event where seasoned and curious meat-lovers alike will taste, learn, and gain a new appreciation for Japanese Wagyu. Meet Nicholas Hellberg, Director of Operations, Wagyu Sommelier A Washington, D.C. resident since 2016, Nicholas Hellberg spent a decade opening and managing a series of Washington, D.C.’s finest new restaurants & hotels before pursuing the Wagyu Sommelier certification in 2024. In February of 2026, he completed his Level II course in Japanese Wagyu butchery & hospitality under the tutelage of Master Butcher Hiroki Samata, chief instructor at the Federal Meat Academy in Tokyo. During his studies, Hellberg became captivated by Wagyu Sommelier founder Nan Sato's vision of creating a fair and honest system to introduce Japan's independent farms to the American market. He now serves as the Director of Operations for Wagyu Sommelier and oversees the daily import, education, and wholesale arms of the company on the East Coast. Meet Brian Lofink, Wagyu Sommelier & Butchery Educator Chef Brian Lofink brings decades of culinary experience shaped by his French-Alsatian and Mauritian heritage. His career spans acclaimed Philadelphia restaurants, including Brasserie Perrier, Matyson, and Sidecar Bar & Grille, which was featured on Food Network’s Diners, Drive-Ins and Dives. As the former Chief Development Officer of Wagyu Sommelier, Lofink worked with chefs nationwide to introduce authentic Japanese A5 Wagyu and traveled to Japan to train alongside master butchers. Today, he serves as a Center of Plate and Wagyu Specialist at Driscoll Foods and teaches at Drexel University. At Jungle Jim’s, he shares his expertise and passion for the craftsmanship, traditions, and exceptional flavors of Japanese Wagyu.
