Rum Cake, Island Cookies & Coquito THE CLASS Bake it Boricua arrives at exactly the right moment: September is when the calendar turns, the air changes, and people start thinking about baking again. This class is designed to give students three recipes they will actually use — a showstopper cake for any gathering, a cookie they will make every holiday season, and a drink that will redefine what a holiday party beverage can be. The Coquito demo at the end of class is intentionally placed: students leave with the recipe and the craving, and will spend the next three months making it for every person they know. THE DISHES Bizcocho de Ron — Puerto Rican Rum Bundt Cake A rum-soaked Bundt cake that looks like it came from a bakery and tastes even better the day after it is made. Students learn the technique of the rum glaze — pouring it over a warm, freshly poked cake and watching it absorb — which is one of the most satisfying moments in baking. The pudding mix in the batter is the professional secret that keeps this cake moist for days. Mantecaditos — Puerto Rican Butter Shortbread Cookies These are the cookies at every Puerto Rican party, on every holiday table, in every abuela's tin. They are made from shortening, powdered sugar, and flour — almost nothing — and the result is a tender, crumbly, melt-on-your-tongue shortbread that students immediately want to replicate at home. The technique lesson: why not to overwork the dough. Coquito — Puerto Rican Coconut Eggnog Coquito is the most shareable recipe in the entire series. It is a no-cook, blender recipe that students can make the night of class — and will make repeatedly through the fall and winter. Every person who tastes a student's home-batch coquito becomes a potential new student for the series. This is the class where word-of-mouth starts building for the November and December classes.
