On October 21, Chef Tori Funn emerged from a personal reset with a new understanding of food as nourishment, culture, memory, creativity, and care. That was the day Green Genius was born. On October 24, we celebrate how far that vision has grown. Garden Before Grace is Chef Tori’s most ambitious supper club yet: an intimate evening of plant-based fine dining, live music, beautiful presentation, and flavors that move from the garden to the table one course at a time. You are not coming to eat a basic plate of vegetables. You are coming to watch Chef Tori turn the garden into a whole night. The Experience The evening begins with two flower-essence mocktails: Eden Green apple, pear, key lime, sage, and a sparkling finish. The Offering Cranberry, pomegranate, hibiscus, and orange. From there, guests will receive two welcome bites Pulled from the Garden: Breaking Bread Sourdough crostini layered with cultured cashew chèvre, roasted butternut squash, caramelized onions, crispy maitake, smoked maple-balsamic reduction, and fresh mint. The Hidden Jewel Purple carrot tartare with black garlic, browned cremini, capers, cornichons, tarragon, a plant-based egg yolk made from yellow tomatoes and pumpkin, and a crisp potato gaufrette. Then the tasting journey begins. Grace Creamy roasted cauliflower soup with plant-based bacon lardons, spiced brioche croutons, and rosemary oil. Harvest: Sweet Dirt A Michelin-inspired golden beetroot salad with Granny Smith apple, toasted black walnuts, cultured cashew chèvre, peppery garden greens, and cider vinaigrette. Be Still A refreshing lemon sgroppino made with lemon sorbet and chilled sparkling wine. Gathering: Silk Garden Lasagna Fresh pasta layered with shiitake, charred leeks, tender garden greens, lemon-cashew béchamel, preserved lemon, and crispy capers. Abundance: Milk & Honey Vanilla coconut-milk ice cream with salted honeycomb brittle, toasted shortbread, bee-free honey caramel, and a sidecar of housemade horchata. Before leaving, every guest will receive a boxed mini chocolate yule log as a final thank-you from Green Genius. And Yes, There Will Be a Live Band A live band will carry the room from the first sip to the final course, giving you a night to eat slowly, enjoy the music, meet new people, and settle into something that feels nothing like the usual dinner out.
