In honor of Hispanic Heritage Month, we'll explore the history, flavors, and techniques behind birria, a dish that has evolved from humble beginnings in Jalisco, Mexico, into a global culinary sensation. You'll learn how to toast and blend dried chiles, build layers of flavor, and create a rich, slow-braised birria from scratch. Along the way, you'll discover the techniques that give this iconic dish its signature depth, from developing a flavorful chile base to creating a deeply satisfying consommé.
