UBS In Person Cooking Class: Big Mac Style Smash Burgers (veg avail)

No-Shows: Please cancel if you are unable to attend or you will be marked as a ‘no show’. After five no-show’s without notification, access to further classes will be paused for 30 days. Cancellations: Cancellations made more than 24 hours before the scheduled class will be refunded the class fee and applicable taxes, no refund can be issued on Eventbrite fees. Cancellations made within 24 hours of the class are non-refundable. Vegetarian Option: Beyond Meat Big Mac Smash Burgers Serves 4; Brian Gwinner 2 pounds ground beef (80/20 mix) Canola oil Kosher salt and fresh black pepper 8 slices American cheese or cheddar cheese 4 sesame seed hamburger buns, split and toasted 2 sesame seed buns, split, top bun trimmed down (these will be used for the middle bun) Assembly Suggestions: Pickles Minced onions Shredded iceberg lettuce Special Sauce, recipe follows • Shape meat into 8 (4-ounce) balls. • Heat a large skillet over medium-high heat. Add canola oil and, working in batches, place the portioned balls of meat in the skillet, spacing at least 3 inches apart. Lightly coat the back of a heavy metal spatula with oil, and smash each ball to flatten to about 1/3-inch thickness. You could also place a small sheet of parchment paper on each meat ball, and smash using a cast-iron burger press; remove parchment before next step. • Season each flattened patty, in the skillet, with kosher salt and fresh black pepper. Cook until bottoms are browned and lightly crisp, about 2 minutes. Flip patties, and season again with salt and pepper. Top each patty with 1 cheese slice. Cook until cheese is melted and patties are cooked through, about 2 minutes. • Place a bottom bun down, add 2 tablespoons of special sauce, followed by a spirnkle of minced onions. Place a burger patty on top of the onions. Place a middle bun down, add a layer of shredded lettuce, and place a 2nd burger patty down. Add a layer of pickles followed by the top bun. Serve extra special sauce on the side. Special Sauce 1 cup mayonnaise ⅓ cup ketchup 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon white wine vinegar 2 teaspoon sugar 3/4 teaspoon smoked paprika 1 teaspoon yellow mustard 2 tablespoons pickle relish Kosher salt and fresh black pepper • Combine all ingredients in a mixing bowl and stir. Taste and re-season.
