In this interactive class, he’ll guide you through a three-course menu inspired by the flavours of India’s western coast, combining regional ingredients and techniques with his contemporary culinary style. You’ll cook alongside Chef Bal, learn professional techniques, discover new ingredients and flavour combinations, and enjoy the dishes you prepare together. On the Menu Tandoori Pear Salad Tandoori-spiced pears, avocado, and arugula with cumin yogurt dressing. You’ll learn: Tandoori marination, how to prepare cumin yogurt dressing, and techniques for plating the finished dish. Konkani Prawn Curry Prawns cooked in a chilli, coriander, and coconut sauce with kokum. You’ll learn: How to prepare the curry from start to finish, building the flavours of a traditional coastal-style coconut sauce. Motichur Cheesecake Cheesecake layered with motichur crumble and served with crisp tuile and pistachio yogurt sauce. You’ll learn: How to prepare and bake the cheesecake mixture and assemble the finished dessert. What to Expect This is a hands-on cooking class suitable for all skill levels.
