Join us at the Italian Cultural Centre for a two-day masterclass where you’ll discover the art of crafting authentic Italian capocollo and homemade sausages, learning traditional techniques passed down through generations. Take home what you make! You’ll bring home the Italian sausages you craft during the workshop, along with a whole capocollo that will be ready for pickup after a few months of curing. Day 1: Preparation & Seasoning Learn the art of trimming, precision cutting, and salting capocollo, preparing it for its 24-hour seasoning process. You’ll also discover how to transform the offcuts into delicious homemade Italian sausages. Day 2: Perfecting Your Creations Return for a focused one-hour session to complete your preparations, refine your technique, and learn more about the secrets behind traditional Italian meat. Bring an apron, a clean container, and your appetite! Feel free to bring your own bottle of wine if you'd like! Join us December 14 and 15, from 6:00 PM to 9:00 PM, at the Italian Cultural Centre.
