This fully hands-on class is designed to teach you how to build layered, balanced dishes from the ground up—combining heat, acid, sweetness, and texture with intention. At the heart of the evening is Achiote Chicken—marinated in citrus, garlic, and annatto for its signature earthy depth and rich color. You’ll learn how to properly build marinades, cook for maximum flavor and tenderness, and pair it with bright, fresh accompaniments. You’ll also prepare a clean, citrus-forward Shrimp Ceviche, mastering balance and knife work, before finishing the night with crisp, golden churros and rich dulce de leche.
